Just like fruits and vegetables, seafood has its peak seasons. This isn’t just about availability; it’s about flavour, texture, and sustainability. When fish are in season, they’re typically more abundant, meaning they’re often fresher, tastier, and sometimes even more affordably priced.

Winter’s Delights (June – August)

Don’t let the cooler weather deter you – winter in South Australia still offers fantastic seafood! This is the season for various types of Tuna, which are often caught off our coast. Heartier, oilier fish like Mackerel might also make an appearance. For something truly special, the deep waters can yield incredible Ling or Gemfish, providing robust flavours perfect for warming winter meals. It’s also a great time for Oysters, which are often at their plumpest and creamiest in the colder months.

Spring’s Fresh Start (September – November)

As the waters begin to warm again, we see a resurgence of many species. Spring is a strong season for Prawns, both local and ethically sourced. Yellowtail Kingfish starts to become more prevalent, prized for its firm, rich flesh, excellent for sashimi or grilling. You’ll also find a good supply of Bream and various smaller, pan-sized fish perfect for a quick and easy meal.

Summer’s Bounty (December – February)

As the South Australian sun shines, our waters come alive with a fantastic array of summer delights. This is prime time for King George Whiting, a beloved SA favourite known for its delicate flavour and firm, white flesh. You’ll also find plenty of Garfish, perfect for light, crispy frying, and Flathead, versatile for grilling or baking. For those who love a bit of a kick, Blue Swimmer Crabs are abundant in our estuaries and gulfs, offering sweet, succulent meat. Keep an eye out for fresh Sardines too, fantastic grilled or pickled, reflecting the Mediterranean influence in our local food scene.

Autumn’s Harvest (March – May)

As the weather cools slightly, a new set of delicious species comes to the fore. Autumn is an excellent time for Snapper, particularly the larger, schooling fish that move closer to shore. Its firm, flaky flesh is perfect for a variety of cooking methods. You might also find good numbers of Cuttlefish and Squid, ideal for calamari rings or more adventurous culinary creations. This is also a strong season for various deeper-water species as they become more accessible.
